Approximately 25,000 tons of sheep & goats’ milk is processed annually at EPIROS plant. EPIROS Zemitha is produced exactly in the same way as the traditional Mizithra (hard whey cheese), from a mixture of sheep’s and goat’s whey. The difference lies in the fact that almost all the fat has been removed from Zemitha, leaving less than 1%; therefore, grated EPIROS Zemitha is the only cheese product with such a low fat content along with a refined, light taste.
